How a dish index is built
Each index is a median of the prices restaurants list for one dish on their own menus, matched by item name against published include and exclude rules — so a “taco salad”, a three-taco plate and a kids’ taco never count toward the price of a taco. It is the asking price, not what a guest paid: no discount, tax, tip or delivery fee is in it.
An index publishes for a place only once 30 matching items from 15 restaurants are in the sample there. Most dishes clear that nationally long before they clear it in any one metro; until they do, the page says “not enough data” and nothing is estimated in its place.
